During ECQ, he was able to cultivate his love for cooking and food by recreating his family’s secret recipes and innovating new ones to suit his wife’s food cravings. One of his latest projects is his best-selling Caviar Cake, made with layers of cream cheese, egg, chives and onions, topped with imported, high-grade black caviar.
Aside from making this classic appetizer which is usually paired with crackers and wine, he was also able to create a unique Japanese-inspired Caviar Cake, made with wasabi infused cream cheese and flying fish roe or salmon roe, otherwise known in Japan as Tobiko and Ikura.
Another specialty of theirs is Pulpo Con Crema De Patatas, a popular Spanish dish made of grilled octopus on a bed of creamy mashed potatoes. The mashed potatoes included in this dish is a family recipe, and a favorite of many!
