Chef Marky’s Chicken Fajitas
Serves 3-4
• 1/2 kg chicken thigh fillet
• 2 red bell peppers
• 1 yellow bell pepper
• 2 green bell peppers
• 1 white onion
• 2 red onions
• 1 bulb garlic
• 1 pack button mushrooms
• Cooking oil
• Parsley (For garnish)
For the spice rub:
• Garlic powder
• Paprika powder
• Dried thyme
• Dried chili flakes
• Salt and pepper
- Season the chicken thigh fillets with the spice rub ingredients.
- Heat oil in a pan. Over low to medium heat, sear the seasoned chicken thigh fillets until cooked.
- Remove the chicken from the pan and let them rest for a few minutes.Slice into strips.
- While the chicken is cooking, saute the garlic, onion, button mushroom and bell peppers on a separate pan.
- Toss the chicken strips into the pan. Stir everything together.
- Grate quick-melting cheese on top.
- Serve on a plate and garnish with parsley.
