  • What do you like most about being a bartender?
I like being a bartender because I meet interesting people everyday and learn a lot from them. Seeing guests have a good time and experience my drinks is the best.
  • What’s your favorite cocktail and why?
Boulevardier for it’s gentle and has a delicate taste. The writer Erskine Gwynne also said that it is Negroni’s long lost autumnal cousin.
  • What’s your favorite Diageo Spirit and why?
I love Diageo’s Oban 14 for its smoky yet creamy taste, with hints of toffee and crisp fruits on the palate. It reminds me of the fresh ocean breeze.
  • Which bartender do you look up to the most and why?
I look up to my mentor here at The Spirits Library, Ralph Allen Santos. He kind of became a bottle that tells stories. He has inspired me in this journey through his life stories, his knowledge and the friendship, which is one of the important for me in this industry.
  • Share with us your favorite memory of being a bartender
When we adapt the cocktail culture to other countries like Singapore. It’s almost the same feeling I get here since I started working in Poblacion, Makati. The bars are in one neighborhood, and it feels like a family in one place where we elevate Filipinos drinks or cocktail experiences.
  • Which is your dream bar to visit?
I dream of visiting Death & Co, New York for their sophisticated and unique way of making drinks and their perspective of the bar and hospitality industry.
