We gathered 5 easy to follow recipes from our foodie friends to level up your ECQ meals! Let’s get cooking.

  1. DAK-GANGYEONG/ KOREAN FRIED CHICKEN WINGS FROM @FORKSPOONMANILA

INGREDIENTS:

  • Vegetable oil
  • 1 kg Chicken Wings
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tbsp garlic powder
  • 2 tbsp lemon juice with lemon zest (optional)
  • 1/2 cup cornstarch
  • 1 cup flour
  • 1 cup cornstarch
  • 1 1/2 cup water
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 3 cloves garlic
  • 2 tbsp gochujang
  • 2 tbsp ketchup
  • Toasted sesame seeds for garnish

PROCEDURE:

For wings:

  1. Marinate chicken wings with salt, pepper, garlic powder and lemon juice. Marinate for 30 mins.
  2. Dredge the wings with cornstarch.
  3. Dip it in batter mixture and start frying for about 15-18minutes
  4. Remove wings from oil and place it in cooling rack or bowl with paper towel to remove excess oil.
  5. Return the wings and fry again until the skin is deeply golden and crunchy. Remove from the heat and set aside.
For sauce:

  1. Add brown sugar in a medium heat pan with soy sauce, garlic, gochujang and ketchup.
  2. Stir until bubbling and slightly thickened
  3. Brush the sauce evenly in each wings
  4. Garnish with toasted sesame seeds and serve with cheese sauce
  1. CLASSIC ADOBO FROM @EATSPLORATIONS

INGREDIENTS:

  • Canola oil
  • Soy sauce 
  • Vinegar 
  • Brown Sugar 
  • Star anise 3-4 pieces
  • Laurel leaf 3-4 leaves
  • Peppercorns 
  • Crushed Garlic 5 or more cloves
  • Chicken Drumsticks

PROCEDURE:

  1. Heat 2-3 tbsp of oil
  2. Brown the drumsticks
  3. Add garlic, peppercorns, anise, laurel leaves, vinegar, soy sauce
  4. Let the ingredients simmer
  5. Add brown sugar
  6. Adjust as you go along, this is a sweet style adobo

*Water to balance
*PRO TIP: Always more soy sauce and sugar than vinegar for the sweet salty and sour balance.

  1. CLASSIC CARBONARA (WITHOUT CREAM) FROM @THEFOODSCOUTMOM (JILL TAN)

INGREDIENTS:

  • 250g Spaghetti
  • 2 large egg yolks
  • 1 large egg
  • 1 cup parmesan cheese
  • 200g bacon or pancetta
  • 1/2 tbsp salt
  • 1/4 tsp black pepper

Makes 2-3 Servings

PROCEDURE:

  1. Cook the spaghetti in a large pan according to package directions. Reserve 1/2 cup of pasta water, to be used for pasta sauce later on.
  2. In a medium-sized bowl, whisk egg yolks and eggs, add Parmesan cheese and season with salt & pepper.
  3. In another pan, cook bacon or pancetta until you achieve its crispy texture.
  4. Toss the cooked spaghetti to your pan with cooked bacon. Add the egg mixture and reserved pasta water. Mix well together for 2-3 minutes.
  5. Serve immediately with Parmesan cheese grating on top.

 

  1. GRILLED SHRIMP AND SOBA FROM @MANILAEATUP

INGREDIENTS:

For the marinade:

  • 2 tbsps ginger, minced
  • 2 cups soy sauce
  • 1 lemon juice, from 1 lemon
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1/2 tsp cayenne pepper
  • 1/2 cup cilantro, chopped
For the sauce:

  • prepare half the marinade amount.
  • 600 grams shrimp, peeled and deveined
  • 8 oz. dried soba noodles

PROCEDURE:

  1. Mix all marinade ingredients in a bowl and marinate the shrimp for 30 minutes. Best to store in the fridge.
  2. Cook dried soba noodles per package instructions. Soak in cold water after to stop the cooking process.
  3. Grill the shrimp. About 3 minutes on each side.
  4. Mix all sauce ingredients in a bowl and pour it sparingly over the noodles until enough to coat them.
  5. Place the grilled shrimp on top of the noodles.
  6. Dig in.

 

  1. STEAK KIMCHIRITO (KIMCHI BURRITO) FROM @MYRONEPO

INGREDIENTS:

  • ¼ cup chopped kimchi
  • 2 tbsp cooking oil
  • 1 & 1/2 cup cooked rice
  • 2 pcs flour tortilla
  • Some leftover steak cut into strips
  • Salt and pepper
  • Aluminum foil or parchment paper

PROCEDURE:

  1. In a wok or pan, heat up 2 tbsp oil and sauté the chopped kimchi
  2. Add in the rice and mix it well. Season with salt and pepper to taste
  3. Assemble the burrito by putting half of the kimchi rice in the center of one tortilla then top it with half of the sliced steak
  4. Roll it up into a burrito and cover tightly with aluminum foil or parchment paper
  5. Do it again with the other flour tortilla and the other half of the rice and steak
  6. Slice it in the middle with a sharp knife and enjoy your Steak Kimchirito!
